Vegan Banana Bread w/ Raisins, Rum, and Orange

Moist, rich, and buttery banana bread w/ raisins, rum, and orange. A flavor trio that completes the exotic banana aroma. Perfect for our morning tea or coffee.


Vegan banana bread w/ raisins, rum, and orange


Plant-based, Nut-free, Soy-free

Makes 1 loaf

Total time: 55 minutes


Ingredients:

2 very ripe bananas

1 cup all-purpose flour

1/2 cups whole wheat flour

3 tbsp muscovado sugar

1/4 tsp baking soda+1 tsp baking powder

1 tsp vanilla extract

1 tsp cinnamon

1 tsp good quality rum

1 tsp lemon juice

Zest from 1 orange

1 tbsp raisins

A good pinch of salt

2/3 cup plant-based milk

2 tbsp extra virgin olive oil

Instructions:

  1. Preheat the oven to 175°C/347°F. Mix all dry ingredients in a bowl: flour, baking soda, and baking powder, cinnamon, and salt.

  2. In a separate bowl, mash the bananas and mix them together with sugar, vanilla, rum, lemon juice, orange zest, raisins, milk, and extra virgin olive oil.

  3. Pour the wet mixture over the dry ingredients. Mix gently with a spatula.

  4. Line a bread pan with parchment paper. Transfer the mixture in it. You can top the batter with chopped nuts if you'd like.

  5. Cook for about 45 mins until golden and a tester inserted into the center comes out clean.

  6. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Enjoy!
