Creamy Zucchini Gnocchi

Fresh, luscious and deliciously satisfying.

Today's cravings involve creamy elements.

I’ve been keeping a zucchini for over a week now and it was time to make something with it. You might all know my obsession with gnocchi by now: luscious and deliciously satisfying, they are super easy to make even if if you have a super busy workday - like I do today.


The gnocchi are store-bought (&super good) so I just boil them and make a quick&easy sauce. It was an impromptu meal, but this zucchini parm loaded sauce was lip smacking. What could go wrong when you combine zucchini and Parmegiano Reggiano? Agree, nothing at all. Hope you’ll enjoy this deliciousness ✨


Creamy Zucchini Gnocchi


Vegetarian

Makes 2 portions

Total time: 20 minutes


Ingredients:


  • 2 cups steamed zucchini

  • 2 tbsp fresh chopped parsley

  • salt & freshly ground black pepper

  • *garlic powder, optional

  • squeeze of 1/4 lemon

  • 1-2 tbsp extra virgin olive oil

  • 2 cups cooked gnocchi (reserve 1/2 cup of the cooking water)

  • 1/3 cup shredded Parmigiano Regiano

Instructions:

  1. In a high speed blender add 2 cups of steamed zucchini, chopped parsley, salt, pepper, lemon juice and oil. Blend well until creamy.

  2. Transfer the sauce to a frying pan and add the cooked gnocchi, stir and cook together for 1-3 minutes. Add a good splash of reserved gnocchi water and mix to a nice consistency.

  3. Add Parmigiano Regiano, mix well and serve with extra black pepper and parm on top, Enjoy!
